Ingredients
  

  • 4 Boneless Skinless chicken breasts
  • 2 tbsp Olive oil
  • Salt and pepper To taste
  • 1/4 cup Diced red onion
  • 1/4 cup Diced cucumber
  • 1/4 cup Diced bell pepper
  • 1/4 cup Diced cherry tomatoes
  • 1/4 cup Crumbled feta cheese
  • 1/4 cup Chopped fresh parsley
  • 2 tbsp Fresh lemon juice
  • 1 tbsp Wine vinegar
  • 1 tbsp Dijon mustard
  • 1 Clove of garlic Minced

Instructions
 

  • Preheat a grill to medium-high heat.
  • Brush the chicken breasts with olive oil andseason with salt and pepper.
  • Grill the chicken for 6–8 minutes per side,or until cooked through. Let the chickencool, then chop into bite-size pieces.
  • In a large bowl, combine the choppedchicken, red onion, cucumber, bell pepper,cherry tomatoes, feta cheese, and parsley.
  • In a small bowl, whisk together the lemonjuice, red wine vinegar, Dijon mustard, andgarlic. Drizzle the dressing over the saladand toss to combine.
