Ingredients
  

  • 1 cup Gluten-free flour blend
  • 1 teaspoon Sugar
  • 1/4 teaspoon Salt
  • 1 cup Milk
  • 2 Large eggs
  • 1 tablespoon Melted butter
  • 1 teaspoon Vanilla extract
  • Butter or oil for cooking
  • Fillings of your choice such as fresh fruit, yogurt, and honey

Instructions
 

  • In a large mixing bowl, whisk together the glutenfree flour blend, sugar, and salt.
  • In a separate small mixing bowl, whisk together the milk, eggs, melted butter, and vanilla extract
  • Pour the wet ingredients into the dry ingredients and whisk until a smooth batter forms
  • Heat a non-stick skillet over medium heat and add a small amount of butter or oil
  • Once the skillet is hot, ladle about 1/4 cup of the batter into the skillet. Tilt the skillet to spread the batter evenly.
  • Cook the crepe for 1-2 minutes on one side, then flip and cook for an additional 30 seconds on the other side.
  • Repeat until all the batter is gone
  • Fill the crepes with the fillings of your choice and serve warm
