Ingredients
- cup Gluten-free flour (you can use a combination of almond flour coconut flour, and/or oat flour)
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1 Ripe banana mashed
- 1 Egg
- 1/2 cup Almond milk or any other milk
- 1 tablespoon Honey or any other sweetener
- 1 teaspoon Vanilla extract
- Butter or oil for cooking
Instructions
- In a medium-sized mixing bowl, combine the flour, baking powder, and salt.
- In a separate bowl, whisk together the mashed banana, egg, almond milk, honey, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but pourable.
- Heat a nonstick skillet or griddle over medium heat. Add a small amount of butter or oil to the skillet.
- Using a ladle or measuring cup, pour about 1/4 cup of batter per pancake onto the skillet. Cook for about 23 minutes per side, or until golden brown.
- Serve with your favorite toppings, such as fresh fruit, maple syrup, or peanut butter.
